Bagels in the Turkish manner

5-6 bagels
250 g of wheat flour
150 ml of water
1 tbsp. olive oil
4 g of salt
6 g fresh yeast
1 and a half tsp. granulated sugar
100 g of sesame
100 g pekmeza: molasses and water 1: 1

In the bowl of the mixer, sift the flour, add the yeast, sugar, and mix the salt.
Pour in water, butter and knead smooth, elastic dough for 10 minutes.
Form the ball and leave it to stand for 1 hour, or until it doubles.

Sesame fry in a pan and cool.
Prepare Pekmez:

mix molasses (molasses) and water in a ratio of 1: 1.
Heat the oven to 190 degrees.

Dough the dough, divide into 5-6 pieces.
Cover them with a wet towel, taking one.
Roll out into a bundle about 1 cm in diameter. Roll out, move from the center to the tips, applying a little pressure to the dough.
Take the tourniquet and fold it in half.
Twist the dough, connecting one end to the other, passing the tips into the resulting loop. Carefully trowel, and roll around the joint.

Bagels dipped in a prepared mixture of molasses and water, then generously roll in sesame.
Place on a baking sheet covered with paper and leave to stand for about 15 minutes.
Bake for 15-20 minutes until golden brown.
