Bread with kinoa and wheat bran

It turned out very tasty bread, I recommend to cook.


two small round loaves:
100 grams of red film
300 ml of cold water
13 g fresh yeast
350 g of wheat flour
0.5 tsp salt
40 g wheat bran

Preparation:
It is advisable to pour bran for the night with water (indicated in the recipe) and put in the refrigerator.
Boil the movie until ready, cool.
In the bowl of the mixer, if not pre-soaked bran, pour all the water specified
in the recipe, add the bran.
Stir and leave for 10 minutes.
Add yeast, sifted flour and salt.
We mix at low speed for 4 minutes, increase the speed to the average and 5 more minutes.
Add half of the portion of the movie and intervene to a uniform distribution.

Forming and baking:
Sprinkle the table with flour and transfer the dough.
We knead it for a minute, form into a bowl, cover with a towel and leave it for 20 minutes.

We collect in an envelope, four corners in the center, we tear it together.
We turn the folded part down, forming a ball.
Cover with a wet towel or film.
Leave for 20 minutes.

We put it on a baking tray covered with paper and leave it for 40 minutes until it grows to two.
Oven to heat up to 220 degrees, bake for 10 minutes.
Reduce the temperature to 200 and bake for another 20 minutes.
Cool on the grate.
