Calzone with figs and cheeses.

Calzone is a closed pizza, which is prepared in the form of a crescent with a filling.
It turns out very tasty and satisfying!


for 5 pieces:
dough:
500 g of flour
15 g fresh yeast
1 tbsp sugar
1 tbsp without top of salt
1 tbsp olive oil
300 ml of water

filling:
10 pieces of figs cut into 4 pieces
250 g mascarpone
200 g of mozzarella
caramel onion

caramel onion:
2 violet bulbs
3 sprigs of cumin
2 tablespoons of date honey (silane, you can replace the usual)
1 \ 2 glasses of red dry wine
1 tbsp sugar brown

for lubrication:
olive oil

Preparation of the dough:
In the mixer's cup sift the flour, add sugar, yeast, salt and mix.
Add olive oil and pour gradually water at low speed
knead for 3 minutes, then increase to medium and 6 minutes more.
Cover with a foil and in a warm place so that the dough increases in two.

Preparation of caramelized onions:
Heat the oven to 180 degrees.
In a bowl, mix the wine, cumin, sugar and honey.
Add the onion, cut into half rings, and mix.
Transfer to the form with foil and bake for 10 minutes.
Remove the foil and bake for another 10 minutes.

Forming and baking:
Dough the batter and divide into 5 equal parts.
Roll into a bowl, form a cake with a diameter of 20.
Half a burrito to grease mascarpone, we put figs on top, caramel onions,
torn with pieces of mazarella.
Cover the filling with the second half of the dough and clamp the edges.
Lubricate with olive oil and sprinkle with poppy seeds if desired.
Bake at a temperature of 250 to a golden color.
