10 pretzel we need:
25 g fresh yeast
500 ml of water (2 cups + 1 tbsp. Spoon)
500 g of flour of bread flour (3 1/2 cups + 1 tbsp spoon)
500 g white flour (3 1/2 glasses + 1 tbsp)
25 grams of salt (1 tbsp + 1 tsp. Spoon)
35 g sugar (3 tbsp)
40 g soft butter

for cooking:
1.5 liters of water
24 g of soda (3 tbsp)
2 tbsp date silane (you can take dark honey))

for lubrication:
olive oil (optional)

Cooking:
Pour water into the mixer cup, add the yeast and stir it.
Then add the sifted flour, salt, sugar and butter.
With a nozzle hook knead until a smooth, soft dough.
Cover with foil and set in a warm place for an hour or until the dough rises in two.
We crush the dough into 10 equal parts of approximately 150 grams.
Roll into sticks 5 cm wide and 18 cm long



Cover baking sheet with baking paper, sprinkle with flour and put buns.
Cover with a towel and let go for an hour



Heat the oven to 200 degrees.
In a wide saucepan, pour the water, bring to a boil, carefully add soda and silane.
Dip one rolls into boiling water (so that they do not touch) and scald for half a minute



We shift on a baking sheet, we make with a sharp knife 3-4 notches.
We bake for 20 minutes or until they turn brown in golden color.
We spread on the grid, at the request of grease with olive oil and sprinkle with large sea salt.
