Carrot cake with nuts



very tasty, fragrant, not difficult to prepare, the cake will delight relatives

we will need:

5 medium carrots
1 cup brown sugar (200 g)
3/4 cup vegetable oil (180 ml)
3 eggs
1.5 cups flour (210 g)
1 tsp baking powder
1 tsp soda
1/2 tsp ground ginger
1 tsp cinnamon
1/2 cups pecans cut (walnuts can be taken)

Cream:
1 box (225 g) mascarpone cream cheese
powdered sugar (to taste)
lemon juice

pecans for decoration

Cooking:
The oven is heated to 175 degrees.
Grate carrots on a grater.
In a mixer cup, mix the vegetable oil and sugar, one at a time.
introduce eggs while continuing to mix.
In another bowl, mix the sifted flour, baking powder, soda, cinnamon and ground ginger, mix everything until homogeneous.
Inject dry products to liquid while continuing to mix.
Add carrots and nuts.
Pour the mass into the form and bake for 50 minutes 1 hour.
Check the readiness of a wooden stick, it should be dry.
Give cool on the grill.

Cream:
Mascarpone mix at room temperature with powdered sugar and lemon juice, add to taste.

Cover the cake with cream.
