1 1/2 cups warm milk
2 tablespoons sugar
25 g fresh yeast
3 1/2 cups (500 g) flour
1 tsp salt
1/4 cup (60 ml) of olive oil
olive oil for dipping dough
small refractory molds or aluminum muffins for muffins
For filling:
200 g salted hard cheese or baby mozzarella
Cherry tomatoes
for decoration:
sprigs of rosemary or cumin
Cooking:
In a bowl, combine the milk, sugar and yeast, mix and leave for 10 minutes.
Sift the flour into the mixer bowl, add the olive oil and the yeast mixture.
Knead with a nozzle hook for 3 minutes at low speed until the dough is soft.
Increase the speed to medium and knead for another 3 minutes so that the dough becomes plastic.
Cover with foil and refrigerate for 1 hour.
Come up the dough to get and knead well to remove the air.
Put it back in the bowl and put in the fridge for 1 hour.
Once again we crush and set for 1 hour in the cold.
Repeat the same procedure again.
Roll out the dough into a layer 0.5 cm thick and cut circles
dip in olive oil and lay out in molds so that the dough is slightly hung
put mozzarella and cherry tomato in the middle
Cover with a towel and leave for 20 minutes.
Heat the oven to 180 degrees.
We bake buns for 20 minutes or until they become golden
